Did you know that avocados are rich in Potassium , Vitamin K, Vitamin C, Folate, Vitamin B5 and B6 as well as Vitamin E. So much goodness from one great breakfast.
The first time I ate Avocado Toast was in the state of Washington a few years back, and it instantly became my favorite. I think I had it every day for the rest of my vacation.
Of course, I had to make it my own version, once I got home.
1 ripe avocado
A bit of olive oil
Some salt
A little pepper
Cayenne pepper
Some turmeric
Mash up all the ingredients together in a bowl. I like to spread spread it on a slice of gluten free toast and top it with a farm fresh egg over easy.
My favorite part of this meal is when I cut through the egg and the yolk just goes everywhere. Some Daikon Radish and some Blood Orange goes really well with it.
This breakfast takes less then 10 minutes to prepare and it’s so yummy, and so good for you!
