Day 3 “quit sugar challenge”

Welcome back to another day in this challenge, I hope you are doing well so far.
I love making soups, especially in the winter. They are easy and quick to make, plus they make a great repeat lunch or dinner.
Making soups such as this one saves me time and money, plus I get all the great nutrients my body needs.
Cauliflowers have Vitamin C, B6, B5, Vitamin K, Omega 3 fatty acids and so many more.
It is low in calories, fat, and cholesterol.
I love using cauliflower in so many dishes. It’s easy on digestion if cooked.
So let’s get cooking:
For today’s recipe you will need:
1 head of cauliflower cut flowers off and cut into quarters boil in water with 1 inch above cauliflower. Cook until very tender.
2-3 cups sliced crimini mushrooms
1 stalk of leaks
1 large garlic clove (minced)
Sautee in a pan with olive oil until tender.
Once cauliflower is tender enough puree with a food processor,
Add 1 ½ teaspoon of chicken stock or vegetable stock or miso however you prefer
Add sea salt
Pepper
A dash of cayenne
A dash of cardamom
Serve immediately or take for lunch the next day. If you would like you could add some bacon or roasted chicken at the end to make it a bit heartier.
