At the beginning of my struggles with gluten-free eating, I never knew what to eat. I had to figure things out the hard way back then, as gluten-free options were not available as they are today. I thought that oatmeal was gluten free as it was not wheat. Makes sense, right? Wrong! Yeah, I was shocked when I came to find out that my oatmeal continued to make me feel unwell. And it is not that oatmeal naturally has gluten in it, but cross-contamination could easily happen, gluten-containing grain fields can sometimes be side by side with oat fields. So, know your oatmeal.

Today I am here to help anyone going through the same struggles I used to, which made me decide to make 20 min videos with the foods I cook in my kitchen. I am hoping to inspire and give ideas to anyone in search for solutions on how to eat gluten-free and to get back into their kitchen.

Granola is one of those things that I don’t like to buy at the store as I feel that the prices can be expensive. So, if you are on a budget like me, I suggest making your own.  I cannot see myself paying anywhere from $6.00 to $10.00 for 11-12 oz of granola. I don’t know about you but in my household, it’s not just me but the whole family that likes eating granola. I can get more than double the amount of granola by making it myself for about the same price.

Let’s get started:

3 cups Gluten-free oatmeal

2 cups of organic nuts (walnuts and Pecans) chopped

1 cup of organic rice Krispies

2 tablespoon organic coconut oil melted

A ¼-1/3 cup of local maple syrup

Vanilla

Cinnamon

Bake at 350 Fahrenheit for about 40 min. stir occasionally

After baking add:

¼ cup of hemp seeds

¼ cup of chia seeds

Let cool and enjoy over yogurt, as a snack, as a cereal, or however you enjoy it.

This recipe will give you 52oz. (6 ½ cups) of granola deliciousness. So, enjoy it!
